    I was cruising the Food Network for a new way to prepare salmon the other day and I came across a recipe which used a grated ginger and garlic in teriyaki marinade with a pineapple salsa served on top that sounded pretty interesting. When I went to the fridge to see how close I could come, this is what I ended up with, and it was fabulous.

    1 lb. Salmon
    2 Tbs. olive oil
    Mango coconut pepper sauce (a sweet and spicy sauce, although pineapple or mango chutney might also work)

    Marinade-
    2 Tbs. Teriyaki sauce
    1 large clove garlic minced
    1 Tbs. Ginger paste

    Place the salmon in a resealable plastic bag, mix the marinade and pour in with the salmon and seal making sure the marinade is evenly spread around the salmon and leaving as little air as possible in the bag. Marinate in the refrigerator for at least 2 hours.

    In a hot skillet over medium high heat, add the olive oil to coat the bottom, then the salmon from the marinade. Cook 1 ½ to 2 minutes per side or until desired doneness. Serve covered with the mango sauce.

    A tangy coleslaw with raisins and nuts went very well with the salmon. You could probably do better than just a baked potato though (I’m thinking some kind of sweet potato might be good). It was super easy and on a one to ten MS friendly scale, I’d put it at an 8 or 9.

    Sounds delicious, AMF. I might add to your recipe a few tips. Be sure to heat the oil until it shimmers like water in rippling pond but before smoking (a hot pan keeps the fish from sticking) and cook the salmon to 125 degrees (use an instant-read thermometer to test doneness) to get the perfect mid-rare this fish deserves.

    The below "cooking with MS" video was just put out by a food blogger in conjunction with CAN DO MS. It's really long--an hour and fifteen minutes--so I haven't watched that much of it (and I caught a few niggles that I disagree with as a chef), but it may be helpful to those hesitant to use the kitchen.
